Welcome to Theme 2 of Easy Fusion Korean Cooking Class !
Koreans love to eat raw vegetable salads with meat dishes. A typical Korean salad dressing would include a number of ingredients such as chopped garlic, soy sauce, sugar, gochugaru, sesame seeds, vinegar, and sesame oil. While a dressing made up of these ingredients is very tasty and healthful, I found that it is still too complicated for most people, including me! That's where my simple yet still very tasty 2 ingredient vinaigrette comes in!

Cooking tip:
All you need is a bottle of seasoned rice vinegar and a few drops of sesame oil, directly applied on the salad greens! No need to mix these in a separate bowl. You just need to sprinkle the vinegar just enough to lightly coat the greens and a few drops of sesame oil, right before serving. You need a little bit of these because they are both very potent; a little goes definitely a long way. Try it and you will be pleasantly surprised! 😉
Now using this cooking tip, let's make:
Korean style coleslaw with cabbage and carrots
Ingredients: cabbage (2 cups, chopped or thinly sliced), carrots (julienned, thinly sliced), seasoned rice vinegar (about 2 tsps), sesame oil (a few drops)
How to make it:
1. Mix vegetables in a bowl.
2. Sprinkle rice vinegar and sesame oil on top of veggies; stir just enough to coat the dressing. That's it!
3. Enjoy the salad with your favorite protein! Bulgogi made with beef or pork would go particularly well with this salad!
Variations (the fun part!)
You can jazz up the salad with your favorite protein such as cooked (leftover) chicken, pork, beef, shrimp, tofu, cooked rice/paste, nuts, chopped green onions, sesame seeds (sunflower seeds, etc). You get the idea. This salad is so easy to make but it works! I make this at home whenever I don't feel like cooking! 😅
