Koreans love egg dishes.  Eggs are used as a garnish for various types of dishes.  Here I would like to show you a simple but very popular Korean egg dish called “gaeran-mari.”



Ingredients:  2 eggs, salt & pepper, oil (1Tb)

How:

1.  Crack eggs in a small bowl and whisk with a fork until yolks have well distributed.  Season with salt & pepper.

2.  Heat a nonstick pan (10 inch) on med low heat, add oil and swirl the pan to evenly coat the pan. 

3.  When the pan gets hot, add egg mixture and swirl the pan so it spreads thin throughout the pan.

When eggs start to set (about 1 min later), gently lift the edge closest to you with a spatula and start rolling the egg away from you until the whole thing gets rolled up in a long rectangular shape.

Cut the roll into pieces (the thickness is up to you).  Thinly sliced egg roll is used as a garnish for various dishes such as "chim" or "japchae".  It makes a great lunch too!

Variations:

You can add different items in the egg mixture such as finely chopped green onion or carrots.
