Theme 5: Korean style pancakes (“jeon”)
I love Korean pancakes called jeon. The beautiful thing about jeon is that
you can use any ingredients! In this theme, I will show you how I would make a
simple but flavorful pancake batter that works every time (just using flour,
egg, water, salt & pepper!) I hope you can create your own version of
Korean style pancake today!!
Cooking
Tip:
Make the
batter using flour, egg, water, salt & pepper. The key is to make the batter not too thick
or thin: you want it to be like thick pancake batter. Use water to adjust the
consistency.
Easy Korean
style onion and carrot pancake (geon)
Ingredients:
Flour (1
cup), egg (1), onion (1, med size, thinly sliced), carrot (1 med, thinly sliced
or julienned), oil (2TB), salt & pepper (1/4 tsp)
Steps:
1. measure
out 1 cup of flour (I use all purpose flour, but you can use any type of flour) and
pour in a bowl.
2. Crack an egg in a measuring cup and fill water up to the ¾ c mark) and whisk with a fork until the egg is evenly distributed.
3. Add egg mixture on top of the flour and start mixing until the batter achieves a thick pancake-like consistency.
4. Mix batter with onion and carrot, few pinches of salt and some pepper.
5. Heat the pan on medium heat until hot, add oil, add batter using a ladle, shake the pan or spread out batter to about ¼ inch thickness.
6. Flip over when the edges start turning golden brown and bubbly inside, cook about 3 min until all veggies are cooked and golden brown.
7. Serve with a Korean pancake sauce (soy sauce diluted with rice vinegar will really bring out the flavor of the pancake!)
Variations:
You can add
sliced zucchini, kimchi (my favorite!), meat (I like to use cooked meat, esp. pork),
cooked shrimp, etc.
