How to cook with CSA (Community Supported Agriculture) veggies week 9: radicchio with a fried egg, radicchio with a spicy tuna and corn salad

This week I received lettuce, radicchio, corn, summer squash, parsley, and Italian basil.

Do you have a sweet tooth?  I do.  😊 As much as many of us like to eat sweet things, eating bitter things such as radicchio could help our body in balance.  According to Eastern medicine, bitter flavor has its own place.  Herbal medicines are notoriously bitter tasting, however they can heal the body when used appropriately.  (Disclaimer: I’m not a trained medical professional; this is just my observation and experience! 😊) For this reason, when I receive bitter veggies such as radicchio, I try to eat them as they are, preserving the bitter flavor in so far as I can tolerate it. 😉

That said, there are ways to mitigate the bitterness in certain greens.  I find that bitter veggies go nicely with food inherently enriched with fats and proteins such as oils, nuts, beans, pork and some seafood.  Sour tastes found in lemon juice and vinegar can also neutralize a bitter flavor. 

In today’s post, I will show you two ways of cooking radicchio simply and deliciously! 😁  

Recipe #1: Sautéed Radicchio with fried egg

Ingredients: radicchio (chopped roughly, about 10 cups), egg (fried or poached, preferably yolk still nice and creamy), extra virgin olive oil (1 TB), garlic powder (1 tsp), salt and pepper

How:

1.  Sauté radicchio in a preheated, oil coated skillet with a pinch of salt until soft.

2.  Add garlic powder and ground black pepper.

3.  Serve cooked radicchio with a fried or poached egg (I like the yolk creamy and runny) as shown in the photo.  The dish went well my  carrot top green goddess dressing, and it was very good!

Recipe #2:  Sautéed radicchio with spicy tuna and corn salad

Ingredients: cooked radicchio from Recipe #1 (3/4 cup, cooked), canned tuna (5 oz), corn (cooked corn kernels, ¼ cup), mayo (1TB), mustard (2tsp), siracha (1/4 tsp), garlic powder and lemon juice (1/8 tsp)

How:

1. Make the salad dressing by mixing: mayo, mustard, siracha, garlic powder and lemon juice.

2.  Mix the tuna (drained of any excess liquid), corn, and the dressing.

3.  Serve tuna and corn salad on a bed of cooked radicchio!  😊

 

So there you have it.  Radicchio in two ways!!
