How to cook with CSA (Community Supported Agriculture) week 10: Swiss chard with steam poached eggs, corn guacamole

This week I received corn, summer squash, tomatoes, Swiss chard, dino kale, whole broccoli (with stems and leaves) and basil.
Recipe 1:
Swiss chard with steam poached eggs

This is a
simple yet nutritious way of eating chard and eggs. Chard is sautéed in a cast iron skillet and
eggs are cooked (“steam poached”) on the bed of chard, covered, until desired
doneness!
Ingredients:
Swiss chard (washed and torn into bite pieces, 10 cups), 2 eggs (farm fresh),
extra virgin olive oil, sesame oil, garlic powder, roasted mixed nuts, and salt
and pepper
How:
1. Sauté
chard in a preheated cast iron (any heavy bottomed pan will do) in extra virgin
olive oil with a pinch of salt, some garlic powder and ground black pepper for
about 3-5min. *Note: When cooking bulky
veggies like Swiss chard, I add veggies in a pan and cover with a lid until
they cook down. Once they cook down, I season and continue to cook uncovered.
2. Crack open eggs (as many as needed) on top of
the veggie.
3. Let eggs cook, covered, heat turned off for
about 3-5 min until eggs are cooked to your desired doneness!
4. Add some sesame oil on yolks and sprinkle some
toasted nuts on cooked veggie, if desired!

2: corn guacamole

Ingredients:
corn (cooked corn kernels ¼ cup), avocado (cut in cubes), salsa (1/2 cup, store
bought)
1. Cook corn until nice and tender. I like to use my pressure cooker—done in 30 min,
cooks corn beautifully every time!
2. Remove corn kernels from the core.
3. Mix the
corn and avocado in the salsa!
4. Serve with your favorite tortilla chips. It goes very well with meats, especially with
pork. It goes well with beets too as
shown in the photo below!
