Lunch being an important meal that provides for the day’s activity, they merit some
thinking. The two main forms of lunches
can be: sandwiches and salads.
Sandwiches can be easily made by putting protein ingredients in between
two slices of bread or in a wrap. Salads
can be made by putting all ingredients in a container. Since there are many excellent sandwich ideas
posted on the Internet these days, I will focus on making lunches that fall
into the category of salads.
How to go about making a good lunch for yourself and /or for your loved ones? I think it starts with the prep. The easiest option would be to make a large portion for the dinner and use leftovers as lunch for the next day. The main dish for dinner can be chicken, pork, beef or non- meat protein sources such as tofu, beans or eggs. Since protein being a vital nutrient for our body, it would make sense to plan a lunch around a protein ingredient. For lunches, I like to use chicken, pork, tofu, eggs, and canned tuna. Beef is best served warm, so I stay away from making it a main protein for a lunch.

How to make lunches with chicken and pork
1. Buy meat in bulk (3-5 lb packages)
2. Marinate meat in soy sauce and white wine

3. Grill or cook on the stove top
4. Store cooked meat in the freezer in a zip
bag, labelled
Cook a large batch meal and freeze in portions |
5. Defrost cooked meat the night before in the fridge
6. Optionally, reheat in the skillet in the
morning
7. Serve meat with veggies (cooked and /or raw) with a sauce (e.g., bbq sauce, salad dressing)
