Baked chicken makes great lunches. The key is to develop the flavors using good spices and bake chicken (I love bone-in skin-on chicken thighs because they are delicious and very affordable!) until nice and crisp! Once chicken is baked to perfection, you can serve it thinly sliced with some veggies and a salad dressing, if desired. And there goes a delicious and nutritious lunch for you and your loved ones! Here’s how I would do it. 😊 

Recipe: Spiced baked chicken thighs lunch

Baked chicken thigh lunch served with fresh green cabbage and tomatoes


Ingredients: chicken thighs (about 3 lbs), spices (garlic powder or adobo seasoning, chilli powder, oregano: about 1 tsp each or enough to coat the meat), salt and pepper 

How: 

1. Marinate chicken thighs in a dry rub consisting of spices such as: garlic powder (adobo seasoning, if available) , chili powder, oregano and salt and pepper. Let sit in the fridge for 8 to 12 hours. 


10 lbs of meat (chicken thighs, beef chuck, pork chops) marinated in 
a dry rub (adobo seasoning, chili powder and oregano)

2. Preheat oven to 350 degrees F. 

3. Bake chicken until crisp and coming off the bone tender for about 50 min. (I like to leave chicken with heat turned off for about an hour to keep cooking and developing flavor, if possible).

4. Freeze chicken in portions, if not using right away. 

On the right is baked chicken thighs packed for the freezer for later consumption!  :)


5. This baked chicken can be served as it is or with a sauce, if desired. Will make an excellent lunch served with cooked beans and veggies.
