Swiss chard is of abundant supply during summer months in our gardens and local farms.
  I receive lots of chard in my CSA share basket, so I decide to make a pie style dish with a Korean flavor. 

Recipe: Korean style Swiss chard pie:

Ingredients: chard (washed and chopped roughly, about 10 cups), 3 eggs, cooked bacon (chopped into bite size pieces, you can use any leftover meat, but I liked the smoky flavor of cooked bacon and happened to have it already cooked in the fridge), onion (1 medium, chopped roughly), soy sauce (1 tsp), sesame oil (1/8 tsp), extra virgin olive oil (2 TB, or any oil of your choice), salt and ground pepper.

How:

1. In a large bowl, crack open eggs and whisk with a fork to evenly distribute yolks and whites.  Then add and mix in bacon, onion, soy sauce and sesame oil.

2.  Add chard in egg mixture, massaging chard to coat well with egg mixture.

3.  Pour the whole thing in a preheated, oil coated heavy bottomed pan (I like to use a cast iron skillet)

4.  Let the pie cook covered until eggs are cooked and chard is soft and tender for about 5-10 min.

5.  Season to taste with salt and ground black pepper, if desired.

6.  This chard pie goes well with meats and other protein dishes.  Good for lunch for sure!!
