CSA week 12 veggies showing tomatoes, cherry peppers,
tomatillos, carrots, shallot, corn, cabbage and kale
This week I
received tomatillos, peppers, cilantro, corn, tomatoes, kale, cabbage, carrots,
and a shallot.
Recipe 1:
Easy tomatillo, tomato salsa:
This is a
super easy twist on the traditional salsa verde. I blanch tomatillo and tomatoes in boiling
water then process them with garlic and peppers (and a shallot). I like to include tomatoes because they balance
acidity of tomatillos. Full of flavor
and goes nicely with virtually all dishes, particularly with pork and seafood.
Ingredients:
tomatillos (about 3/4 lb), tomatoes (2 med size), garlic (2 tbs, chopped), peppers
(1 med size, any varieties, in this recipe I used 1 cherry pepper from Eight
Mile Creek Farm)

How:
1. Boil water in a pot and cook tomatillos and
tomatoes until softened for about 3-5min.
Peel off outer skin layer from tomatoes, if desired.
2. Add tomatillos and tomatoes in the food
processor along with the rest of aromatic veggies. Process until desired texture is achieved.
3. Season
to taste with salt and serve with cilantro.

Recipe 2: Parsley peanut butter hummus pesto:
This is a
recipe I made last week with the beautiful parsley I received from Pam, our wonderful
CSA farmer from Eight Mile Creek Farm.
This is a hybrid of pesto and hummus! 😊 I used peanut butter in lieu of traditionally used tahini paste because I
didn’t have it. It worked out very well!
Ingredients:
parsley (2 cups, chopped), canned chickpeas (15 oz, any cooked beans will do), peanut butter (2 TB), lemon, garlic (2 tsp, chopped), extra virgin olive oil (about ¼ cup), kosher salt

1. Process parsley, beans, juice from lemon,
garlic and olive oil until desired consistency is achieved.
2. Season to taste.
