What’s in
for lunch today? In today’s post, I’d
like to share a hummus made with rainbow chard stems and tomatillos in addition
to beans, garlic and olive oil. This
hummus will go well with any meats (especially with pork), tortilla chips,
bread and veggies as a complementary sauce or a dip.
Ingredients:
rainbow chard stems (roughly chopped), tomatillos (3), canned beans (15 oz,
well drained of liquid), garlic (1-2 cloves), extra virgin olive oil (about 1/4 cup), kosher
salt

How:
Process all
ingredients in the food processor until smooth and rich.

This is a
simple yet very delicious and nutritious lunch idea that you can try. You can always substitute different veggies
and beans. Tomatillos add a nice refreshing
acidity to beans and oil. You can use
lemon juice in lieu of tomatillos.
