Today I'd like to share with you how to make a super easy homemade chicken stock.  Chicken stock is a very useful cooking staple, even more so when the weather is getting colder here in the North East of the States!  

The formal way of making chicken stock takes time even though it will be far more superior in quality!  Having said that, sometimes we want something quick when we are busy or tired!


Here's how: use store bought rotisserie chicken.  Eat the chicken for dinner and then use the bones to make chicken stock while cleaning up!!  😁

Recipe: Super easy homemade chicken stock:

Ingredients: Rotisserie chicken bones, onion (quartered, or garlic cloves, ends of green onions saved up in the freezer!), peppercorns (optional), bay leaf (optional)

How:

1.  Place chicken bones in the pot and fill it with cold water.

2.  Bring it to boil and reduce heat to simmer for about 20 min, uncovered. Skim off foam.

3.  Add aromatics such as onion ( garlic or green onions), peppercorns and bay leaves

4.  Turn off heat and let it sit for about an 1 hour, covered for flavors to develop. 

5.  That's it!  Now chicken stock ready for your delicious soups and stews and much more!! 😄
