Here's an easy Korean style pork roast slow cooked in kimchi, gochujang, Korean miso paste cooking liquid. For pork roast, I buy a big piece, about 5 pounds. Pork picnic roast or rib ends roast would do. The key is to generate flavor through dry rub and browning. I cook the meat with potatoes and onions in a slow cooker for about 4 hours on high. I find that if cooked too long, flavor becomes diluted. However, one should consult manufacturer's instructions for one's specific cooker for best results! :)
Here's how I made this delicious Korean comfort stew 🍲:
Step 1: Apply dry rub with salt, ground black pepper, garlic powder.
Step2: Brown the meat on cast iron pan both sides until golden brown.
Step 3: Remove meat. Then add chopped onions with some white wine or mirin. Scrape the sucs (the bottom bits) and stir well.
Step 4: Make cooking liquid with kimchi, gochujang, miso paste-- mix these with about 1to 2 cups of water 💦.
Step 5: Load everything in slow cooker in the following order -- meat, onions, potatoes, the liquid.
Step 6: Cook until meat is flavorful and tender~~ Enjoy^^
