Koreans eat rice cake soup for new years day. Here's a very simple version of rice cake soup with dumplings, fishcake balls and veggies such as broccoli 🥦 and cauliflower. You can add tofu for more substance.
Stock is very simple to make: just simmer a quartered onion 🧅 and peppercorns. I used green onion ends I saved up in the freezer :) Nothing goes to waste in our kitchen... I try ;)
Once stock simmers and flavorful, strain the solids and add all ingredients (rice cake, fishcake, dumplings and veggies). Bring to a boil, simmer and season to taste with salt, ground black pepper and soy sauce. Best served with kimchi:)
