Parsley kale pesto with roasted beets and avocado 🥑

CSA 2022 season is almost over. This week we had parsley, kale and beets from the local organic farmer Pam, owner of Eight Mile Creek Farm, Westerlo NY. Here's a simple but delicious pesto like dish I made! All you need is garlic, juice of lime or lemon 🍋 and olive oil. Process all greens with the aromatics and acid of your choice and some drizzles of  fresh extra virgin olive oil. And there you have the delicious condiment that goes with pretty much anything! :) Hope you enjoy it!
