Bokchoy and fennel in homemade tahini sauce with farm fresh mint

CSA week 2. My organic farmer Pam delivered farm fresh mint, bokchoy ... among many other veggies Tuesday. It's time to get creative ... and I thought I would make a minty tahini sauce! This is like a variation of Korean bean soup (콩국수). Very creamy and delicious!
