Kimchi paste base

Today is kimchi day! Making kimchi using the napa cabbage πŸ₯¬ from local organic farm! Below is the kimchi paste base and that will the topic of the day: how to make kimchi paste base. There are many different ways of making kimchi paste and this happens to my version! I make the base by mixing pepper 🌢️ flakes (고좔가루) and hot rice 🍚 porridge (μŒ€μ£½). That's it! You can try different ratios. It all depends on your taste preference!! Below are photos of kimchi making process. After the base has cooled, you can add the following to complete the paste: garlic πŸ§„, ginger, fish sauce and sugar if needed! Kimchi is an art, meaning you have to eventually come up with your own through practice and it would be all worth it in the end!!
