Purslane salad w homemade basil 🌿 peanut butter cream served with toasted almonds

CSA 2023 Week 3
We received purslane and basil among many other veggies from the local organic farm Eight Mile Creek Farm. Purslane is a new green that I am trying and did some search about how to eat this cute veggie! Found out it goes very well with cucumbers, tomatoes and sour flavours. It is "slimy" so crunchy textures and bold flavors complement the stickiness of purslane. Basil peanut butter cream which I put together in a high speed blender worked very well. This is a versatile salad. I combined the salad with oatmeal and leftover kimchi chives pancake (김치부추전) with some oil & vinegar to bring out more flavors!
