Looking for a way to cook those tomatoes from your garden? Here's an easy recipe you can try! All you need is chopped zucchini, eggplant, canned beans and some garlic. And of course farm or garden fresh tomatoes and eggs. First, make tomato sauce by cooking tomatoes with garlic until fragrant in a saucepan. Next, cook zucchini and eggplant in olive 🫒 oil with some garlic until soft 8-10 min. Add tomato sauce and beans in the vegetable mixture. Season to taste with salt and pepper. Adding some vodka sauce would be optional. I added turkey 🦃 meatballs for more substance. It's up to you. Lastly crack some eggs on top and let them cook covered. Great with bread and pasta!  Perfect hearty harvest soupy dish on a chilly autumn 🍁🥮 day!!
