Curry beef w roasted beets & egg

So... you made a curry dish and would like to make it more interesting?? 💭🤔 You could add... beets and hard boiled eggs... for a change! Curry is a versatile dish and it goes well with pretty much everything!! I used roasted beets which I cooked and froze during the summer 🏝️ CSA season!! Happy cooking!! 😄 Young Jin Michelle ❤️

Harvest Time Ratatouille w farm fresh tomatoes 🍅, beans 🫘 eggplant 🍆, zucchini with vodka sauce topped with poached eggs

Looking for a way to cook those tomatoes from your garden? Here's an easy recipe you can try! All you need is chopped zucchini, eggplant, canned beans and some garlic. And of course farm or garden fresh tomatoes and eggs. First, make tomato sauce by cooking tomatoes with garlic until fragrant in a saucepan. Next, cook zucchini and eggplant in olive 🫒 oil with some garlic until soft 8-10 min. Add tomato sauce and beans in the vegetable mixture. Season to taste with salt and pepper. Adding some vodka sauce would be optional. I added turkey 🦃 meatballs for more substance. It's up to you. Lastly crack some eggs on top and let them cook covered. Great with bread and pasta!
